Summer has definitely arrived in Bengaluru. However it is still pretty & comfortable during the evenings & the morning hours.. the heat is yet to come. I am here with a summer drink for killing afternoon to beat the heat.Yeah you smart guys guessed it right, I am kinda obsessed with these lovely pearls and if a get a chance to add them to a sparkling drink on a lazy weekend and that too with the refreshing touch of mint and ginger. It will be just WOW!!
1/4 cup granulated sugar 1-inch piece ginger, thinly sliced 1 bunch mint 1/4 cup pomegranate juice 1 ounce vodka 1/4 cup sparkling water
If you don’t like mint and ginger, simply omit them from the recipe and add more pomegranate juice to the glass. To make simple syrup: In a sauce pot, combine sugar, 1/4 cup water, sliced ginger, and a handful of mint leaves. Cook on medium-high heat, allowing sugar to dissolve. Bring to a boil, then turn off heat and let ginger and mint steep in liquid until cooled to room temperature. Strain cooled liquid into measuring cup, and discard solids. To make cocktail: Fill a chilled glass with ice. Fill with 2 tablespoons of ginger/mint syrup, 1/4 cup pomegranate juice, and 1 ounce of vodka. Top with sparkling water, and garnish with a spearmint sprig.
